Quick & Easy Salad Bowl

Salad bowls are my go-to meal. They are quick and easy and they taste so God damn good. I’m so often traveling with work, that it’s hard to do a big shop for the week without wasting food. So, these bowls are my saviour – the perfect clean-out-the-fridge meal. You can mix up the vegetables. I enjoy eating mine raw as they taste delicious just the way they are, plus you get more nutrients if you leave them be. I like to keep it colourful, too (variety is the spice of life!), and dress everything up with a good dollop of hummus, a sprinkling of nuts and seeds, brown rice or quinoa, a poached egg for protein and some haloumi (also super long-lasting in the fridge) for extra kick. Top it all off with a drizzle of cold-pressed olive oil and some salt and pepper and you’ve got a guaranteed winner dinner.
