The Life Changing Bread Loaf

Once a week, I like to dedicate a few hours to food prep for the days ahead. Being organized ensures you eat well all week long – and it helps you get creative, too.

Breakfast is by far my favorite meal of the day and starting off healthily sets me up with the right amount of energy for work and play. One of my all-time favorite meals is avocado on toast. There’s nothing better then a cup of tea with a slice of delicious toast. I like to make my own, and I’ve found the tastiest, most nourishing bread loaf that will literately change your life AND its vegan and gluten-free! It’s from a blog that I love called My New Roots. Here’s the recipe:

Makes one Loaf:

1  cup sunflower seeds
1/2 cup flax seeds
1/2 cup hazel nuts or almonds
1 1/2 cups rolled oats
1 tbsp chai seeds
4 tbsp psyllium husk ( 3tbs if using powder) 
1 tsp fine grain sea salt ( 1/s tsp if using coarse salt) 
1 tbsp of maple syrup ( use stevia for sugar free diets ) 
3tbsp melted coconut oil
1 1/2 cups/ 350ml water
